I eat at a 500 calorie deficit during the week, then on the weekend I eat around 1k over maintenance so at the end of the week I have no weight gain or weight loss, which is what I want, is it ok to do this, or would it be better to just eat at maintaitence every day?

Pretty sure it doesn't matter as long as you're getting enough protein on your deficit days. -3X

I think it would be easier just to eat at maintenance just so you're not eating in a caloric deficit for the majority of the week, but if your total calories are the same at the end of the week, I think that would be fine.

But that would make eating out on the weekends alot more enjoyable since you don't have to worry about going over your calories for the day.

@Jsn3004 one of the reasons why I eat at a deficit during the week, and then over maintenance on the weekends is so I can eat out without worrying about going over my calories.
