I eat around a 1000-1200 calorie deficit Monday-Thursday and then from Friday-Sunday I eat 1000-1500 calories over maintenance. Anything wrong with doing this?

I think as long as you average out over the entire week you're fine.

If it doesn't effect performance where it's needed and the scale is moving the correct way I see no issue with doing this.

I think you should eat more calories if you do exercises a lot.
